Today is meal prep day. Today I prepared and prepped some of the meals I will eat during the week. I prepared baked chicken. I used boneless, skinless chicken thighs. I seasoned them with herbs, onion, and bell pepper. I also cooked green curry chicken and squash. I will eat oatmeal or drink a protein shake in the mornings. Tomorrow is Meatless Monday so the plan is to not eat meat.
On another note. I went to Zumba on Saturday for the 4th time this week. It was sooooo fun. I was asked by the instructor to come to the front of class and perform one of the songs!! It was one of my most favorite songs. I have the best time with my ZFam. WE ROCK!!!
